Важность процесса ферментации верблюжьего молока и его влияние на организм человека (на казахском языке)

Аннотация. В данной статье рассматривается важность процесса фермен-
тации верблюжьего молока и его влияние на организм человека. Фермента-
ция способствует образованию биологически активных веществ, улучшает
качество готового продукта и повышает его натуральную ценность. В статье
представлены уникальный состав верблюжьего молока, полезные свойства,
возникающие в процессе его ферментации, а также пищевые и лечебные
свойства шубата. Верблюжье молоко улучшает работу желудочно-кишечного
тракта, укрепляет иммунитет, способствует очищению от токсинов и содер-
жит множество полезных микроэлементов и пробиотиков. Процесс фермен-
тации верблюжьего молока увеличивает биологическую ценность шубата,
поскольку в его составе образуются органические кислоты, ферменты и ан-
тиоксиданты, что делает этот напиток полезным для организма.
Ключевые слова: верблюжье молоко, шубат, процесс ферментации, молоч-
нокислые бактерии, ферментация.
